Wayward Child Pinot Gris 2019
Pinot Gris, a genetic mutation of Pinot Noir – little bit of a wayward child in of itself. This little guy is interesting for a few reasons.
One, its got skins thrown in with the juice. While not unique, its not particularly common. Two, the addition of skins adds a phenolic component different to most Gris on the market. Three, wild yeast ferment with controlled low temp is again unusual as normally wild yeasts require a higher temp ferment to stay alive.
Its a bit weird, but also a bit wonderful. Buy it and pair with Banh Mi, you won’t regret it!
